Prep & Muddling

    Combine limes and sugar

    In a large sturdy mixing glass or pitcher, add the granulated sugar and the juice from the fresh limes. Stir briefly to begin dissolving the sugar.

    Add mint

    Tuck the mint leaves into the lime-sugar mixture. Using a muddler (or the back of a wooden spoon), gently muddle the mint 6–8 times. Aim to bruise the leaves to release oils without shredding them — this keeps the drink bright instead of bitter.

Mixing & Chilling

    Add about 2 cups of cubed ice to the pitcher or transfer the muddled mixture to a cocktail shaker with ice. If using a shaker, cap and shake vigorously for 10–15 seconds to chill and further integrate flavors. If staying in the pitcher, stir vigorously until chilled (about 20–30 seconds).

    Taste the mixture. If the sugar hasn't fully dissolved or you'd like the drink sweeter, add up to 1/4 cup simple syrup and stir to combine.

Finish & Serve

    Place crushed ice or fresh ice in four highball or Collins glasses (about 3/4 cup per glass). Divide the muddled lime-mint mixture among the glasses (about 1/3 cup each).

    Top each glass with about 1/2 cup (120 ml) cold club soda or sparkling water, gently stir once to combine and lift some mint leaves through the drink for aroma.

    Garnish each glass with a lime wedge and a sprig of mint. Serve immediately with a straw or stirrer.
