Queso Base

    Prepare cheeses

    Shred Monterey Jack and white cheddar if not pre-shredded. Crumble the queso fresco and set all cheeses aside in a bowl. Toss the shredded cheddar and Monterey Jack with the cornstarch until evenly coated — this helps prevent separation.

    Warm milk mixture: In a medium heavy-bottomed saucepan over medium-low heat, combine the whole milk and half-and-half. Whisk gently and heat until just steaming and small bubbles form around the edge (do not boil), about 4–6 minutes.

    Melt cheeses slowly: Reduce heat to low. Add about a third of the shredded cheese to the warm milk and whisk constantly until melted and smooth before adding the next portion. Continue in two more additions, whisking until fully incorporated and smooth. Stir in the crumbled queso fresco and whisk until the texture is creamy.

Tomato & Aromatics

    Cook aromatics: In a small skillet, melt the butter over medium heat. Add the diced onion and cook until translucent, 3–4 minutes. Add the minced garlic and cook another 30 seconds until fragrant. Add the diced Roma tomatoes and cook until they release some juice and soften, about 2–3 minutes. Remove from heat.

    Fold into queso: Stir the cooked tomato-onion mixture into the melted cheese base, mixing until evenly distributed.

Spice Blend (Secret Spice)

    Combine spices: In a small bowl, mix the ground cumin, smoked paprika, cayenne, ancho chile powder, kosher salt, and black pepper.

    Season the queso: Whisk half of the spice blend into the queso mixture over low heat, tasting as you go. If you prefer more heat or smokiness, add the remaining half. Keep the queso at a gentle warm — do not boil — for 2–3 minutes to let flavors marry.

Heat & Finish

    Prepare jalapeño and chipotle: Stir the finely diced jalapeño and chopped chipotle in adobo (if using) into the queso. If you want more pronounced heat, add some of the jalapeño seeds or an extra 0.5 tsp cayenne.

    Adjust texture and acidity: If the queso is too thick, whisk in up to 2 tablespoons additional milk one tablespoon at a time until desired consistency is reached. Stir in the lime juice and chopped cilantro. Taste and adjust salt, pepper, or lime as needed.

    Keep warm for serving: Transfer the queso to a small warm serving pot or fondue-style server to maintain temperature. Stir occasionally to prevent skin from forming. If it begins to separate, remove from heat and whisk in 1 tablespoon cold milk to re-emulsify.
