Frozen Piña Colada Base

    Chill glass

    Place the serving glasses in the freezer for 10–15 minutes while you prepare the drink to keep the frozen mixture from melting quickly.

    Measure liquids

    In a blender pitcher add 8 oz white rum, 2 cups pineapple juice, 1 cup canned crushed pineapple (with its juice), 3 tablespoons cream of coconut, 2 tablespoons heavy cream, and 1 tablespoon fresh lime juice.

    Add ice and sweeten

    Add 5 cups of ice to the blender. If you prefer it sweeter, add up to 1 teaspoon granulated sugar. Note: cream of coconut is sweetened—taste and adjust after blending if needed.

    Blend

    Secure the blender lid and blend on high for 20–40 seconds, or until the mixture is smooth and slushy with no large ice chunks. Stop and scrape down the sides once if necessary, then pulse again to finalize texture. Aim for a thick, scoopable consistency that will hold a floater on top.

    Taste and adjust

    Taste a small spoonful. If the mixture is too strong, add 2–4 tablespoons additional pineapple juice and pulse to combine. If too thin, add 1/2 cup more ice and re-blend briefly. Adjust sweetness with a little more cream of coconut or sugar if desired.

The Floater (Lock It In)

    Portion the base

    Remove chilled glasses from the freezer and spoon or pour the frozen piña colada into each glass, leaving about 1/2 to 3/4 inch space at the top for the floater. This recipe makes approximately 3–4 generous servings depending on glass size.

    Add the floater

    Using a measured pour or bar spoon, gently float 1/2 oz of overproof rum (or dark aged rum) on top of each drink. To float: pour the rum slowly over the back of a spoon held just above the cocktail surface so the rum stays on top instead of mixing in. If you prefer a stronger floater, use up to 2/3 oz per glass, but start with 1/2 oz.

    Alternative floater presentation

    For a showy presentation, ignite the floater carefully only if using overproof spirit and appropriate safety precautions (keep a fire extinguisher nearby). Let flame burn for a few seconds then extinguish before drinking. (Optional and not required.)

Garnish & Serve

    Garnish

    Garnish each drink with a pineapple wedge, a toasted pineapple slice or maraschino cherry on a pick, and a cocktail umbrella if desired. Rim the glass with a small amount of crushed pineapple or sugar for extra flair.

    Serve

    Serve immediately with a wide straw and a small spoon. Advise guests to stir the floater into the frozen base before sipping if they want the extra kick mixed through; otherwise it will sip separately from the top.
