Place the honjozo sake bottle in the refrigerator for at least 2 hours or until well chilled (ideally 45–10°F / 7–4°C). When ready to serve, open the bottle gently and pour the sake into a chilled carafe or tokkuri to allow the aroma to settle for 2–3 minutes before serving.

Chill and decant

Using a vegetable peeler, remove thin strips of yuzu (or substitute lemon if yuzu unavailable). Lightly bruise each shiso leaf by folding them in half and giving a gentle clap between your palms to release aroma.

Prepare yuzu peel and shiso

Place the grated ginger and yuzu strips into the chilled carafe with the sake and stir gently once. Let the mixture rest for 30–60 seconds to allow top-note aromatics to lift into the sake, then fish out the yuzu if you prefer a lighter perfumed nose (leave it in for more pronounced citrus).

Infuse subtle aromatics

Pour the chilled infused honjozo into small warmed or chilled ochoko (sake cups). Garnish each cup with a torn shiso leaf floated on the surface. Serve immediately so guests experience the crisp, savory aroma and a clean dry finish.

Serve chilled (traditional)

For an alternative presentation, place 2–3 ice cubes into a short glass, pour 90–120 ml sake over the ice, and garnish with a shiso leaf and a small yuzu strip. If you prefer a slightly softer, more open palate, stir in up to 50 ml filtered water per 180 ml serving to taste before serving.
