Lychee Simple Syrup
Cocktail / Soda Assembly
Method
Lychee Simple Syrup
- 1
Combine and heat
Drain 1 cup canned lychees, reserving the syrup. Add the drained lychees and 1 cup water to a small saucepan. Stir in 1/2 cup granulated sugar.
- 2
Simmer and extract
Bring the mixture to a gentle simmer over medium heat, stirring until the sugar dissolves. Simmer for 6–8 minutes to allow the lychee flavor to infuse and slightly reduce the liquid.
- 3
Strain and finish
Remove from heat and let cool 5 minutes, then strain the solids through a fine mesh sieve, pressing on the fruit to extract as much liquid as possible. Discard solids or reserve a few for garnish. Stir in 1 tablespoon fresh lime juice to brighten the syrup. Cool to room temperature, then chill in the refrigerator if not using immediately. Yield: about 3/4 to 1 cup syrup.
Cocktail / Soda Assembly
- 4
Prepare glass
Fill a tall glass with about 1 cup crushed ice. If you prefer a layered look, spoon the ice gently so it sits evenly.
- 5
Add flavor base
Pour 3 tablespoons lychee syrup over the ice. Add 1/2 tablespoon fresh lime juice and, if using for alcohol, 1 teaspoon lychee liqueur. Gently stir once to combine the syrup and lime juice with the ice.
- 6
Top with soda
Slowly pour 6 ounces chilled carbonated water or club soda over the back of a spoon onto the drink to preserve some effervescence and create a gentle layering. Stir lightly once or twice to integrate but keep bubbles.
- 7
Garnish and finish
Skewer 2–3 reserved whole lychees on a cocktail pick and rest on the rim or drop into the drink. Clap or lightly smack 4 mint leaves between your palms to wake the oils and tuck them into the drink for aroma. Taste and adjust: add up to 1 tablespoon more syrup if you prefer sweeter, or a squeeze of lime for more brightness.
- 8
Serve immediately with a straw and enjoy chilled.
