Cocktail

Method

Cocktail

  1. 1

    Build and shake

Add 2 oz Tanqueray gin, 0.5 oz crème de cassis, 0.5 oz lychee liqueur (or lychee syrup), 0.5 oz plum puree (or ume syrup), and 0.5 oz fresh yuzu juice into a cocktail shaker filled with ice. Shake vigorously for 10–15 seconds until the shaker is well chilled and slightly frosted.

  2. 2

    Strain and top

Double-strain the mixture into a chilled highball or Collins glass filled halfway with fresh ice. Top with about 2 oz cold club soda to add effervescence and a lighter body. Gently stir once with a bar spoon to combine, taking care not to over-dilute or flatten the soda.

Garnish & Finish

  1. 3

Skewer the fresh or drained lychee on a cocktail pick and place it on the rim or drop it into the drink. Add a thin plum slice or small wedge on the rim or floated on top. If desired, express a lemon or yuzu peel over the glass to release oils and drop the twist into the cocktail for extra aroma.
