    Chill glass

    Place a coupe or Nick & Nora glass in the freezer or fill it with ice water to chill while you build the cocktail.

    Combine ingredients

    In a mixing glass or shaker filled with plenty of ice, pour 1.5 oz Akashi plum sake, 1 oz house sweet vermouth blend, and 2 dashes Angostura bitters. If you prefer a slightly sweeter, silkier finish, add 1/4 teaspoon simple syrup.

    Stir

    Stir the mixture with a bar spoon for 25–30 seconds (about 20–30 full revolutions) until well-chilled and slightly diluted. Aim for a clear, cold mixture — not overly frothy.

    Prep glass and strain

    Discard ice or water from the chilled serving glass. Double-strain the cocktail from the mixing glass into the chilled coupe/Nick & Nora to keep it clear and smooth.

    Garnish and finish

    Express a lemon twist over the drink (optional) to release oils, run the twist around the rim, and drop it in or discard. Add a brandied or Luxardo cherry on a pick and place it in the glass. Optionally add a tiny spray of Angostura over the top for aromatic lift.

    Serve

    Serve immediately. The cocktail is short and sweet with a smooth plum-forward sake presence balanced by the spicy-sweet vermouth and aromatic bitters.
