Finely chop the chives and parsley. Mince the garlic clove and set aside. Crumble the blue cheese so there are a mix of small crumbles and a few larger pieces for texture.

In a medium mixing bowl, whisk together 1 cup mayonnaise and 1/2 cup sour cream until smooth and uniform in texture.

Stir in 1/2 cup buttermilk, 2 tablespoons Sriracha, 1 teaspoon white wine vinegar and 1/2 teaspoon lemon juice. Whisk until incorporated. Taste for heat and acidity balance; add the optional 1 teaspoon honey if the dressing tastes too sharp or spicy.

Fold in blue cheese
Gently fold in 3/4 cup crumbled blue cheese with a spatula or spoon, leaving some larger crumbles intact for texture. Reserve a small pinch (about 1 tablespoon) of crumbles to sprinkle on top when serving, if desired.

Adjust consistency
If the dressing is thicker than you prefer, whisk in up to 2 tablespoons cold water, 1 tablespoon at a time, until you reach the desired pourable but creamy consistency. If it becomes too thin, add a tablespoon of sour cream or mayonnaise to thicken.

Cover the bowl with plastic wrap or transfer the dressing to an airtight container and refrigerate for at least 1 hour (preferably 2–4 hours) to allow flavors to meld and the heat from the Sriracha to mellow. The dressing can be used immediately if needed, but chilling improves flavor.
