Method
Preparation
- 1
Measure and prep all ingredients: mince the shallot, crack the peppercorns coarsely with a mortar and pestle or heavy pan, cube the cold butter, and have the Cognac, stock and cream ready. This keeps the sauce moving smoothly during cooking.
Cooking the Sauce
- 2
Sweat shallot and bloom pepper
Place a medium skillet over medium heat. Add 2 tablespoons unsalted butter and let it melt until foamy but not browned. Add the minced shallot and cook, stirring, 2–3 minutes until softened and translucent. Add the cracked black peppercorns and cook 30 seconds to bloom their aroma, stirring constantly so they don't burn.
- 3
Flambé/degaze with Cognac
Carefully add 3 tablespoons Cognac to the pan. If you are comfortable and it's safe to do so, tilt the pan away from you and ignite briefly with a long lighter to burn off some alcohol and concentrate flavor; let the flame subside. If you prefer not to flambé, stir and allow the alcohol to cook off for 1–2 minutes. Scrape any browned bits from the pan.
- 4
Reduce with stock
Add 1 cup beef or veal stock to the pan and bring to a simmer. Let the liquid reduce by about half, 6–8 minutes, stirring occasionally. This concentrates the flavor and creates the body of the sauce.
- 5
Finish with cream and seasonings
Lower the heat to medium-low and stir in 1/2 cup heavy cream, 1 teaspoon Dijon mustard and 1/2 teaspoon Worcestershire sauce. Simmer gently for 3–4 minutes until the sauce thickens slightly and coats the back of a spoon. Taste and add 1/4 teaspoon fine sea salt and white pepper to taste if desired.
- 6
Mount with cold butter
Remove the pan from the heat. Whisk in 1 tablespoon cold cubed unsalted butter a few pieces at a time until fully incorporated and the sauce is glossy and slightly thickened. This enriches and smooths the texture.
Serving

Makes enough sauce for 4 servings (about 1 to 1 1/4 cups). Rewarm gently over low heat if needed; if the sauce separates, whisk in a small splash of cream or a few cold butter cubes off heat to re-emulsify.
