Preparation
Prepare the Dipping Sauce
In a small bowl, mix together the following ingredients for the red dipping sauce.
Combine 1/4 cup hoisin sauce, 2 tablespoons peanut butter, 1 tablespoon rice vinegar, and a pinch of red pepper flakes. Stir until smooth and set aside.
Assemble the Spring Rolls
Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for about 10 seconds until soft.
Lay the softened wrapper on a clean surface. Place a small amount of each filling ingredient (carrots, cucumber, red bell pepper, cilantro, mint, noodles, and shrimp) towards the bottom third of the wrapper.
Fold the sides of the wrapper over the filling, then roll it up tightly from the bottom to the top. Repeat until all ingredients are used.
Serve the spring rolls with the red sauce for dipping.
