Prepare the Rice
In a medium saucepan, add the long-grain rice and 2 cups of water. Bring to a boil, cover, and reduce heat to low. Let it simmer for about 15 minutes or until the rice is cooked and the water is absorbed. Remove from heat and let it sit covered for 5 minutes.
Cook the Salmon
While the rice is cooking, heat 1 tablespoon of olive oil in a skillet over medium heat. Season the salmon fillets with salt, pepper, and lemon juice. Place the salmon fillets in the skillet and cook for about 4-5 minutes on each side, or until the salmon is cooked through and flakes easily with a fork. Remove the salmon from the skillet and set aside.
Sauté the Vegetables
In the same skillet, add the remaining tablespoon of olive oil. Add minced garlic and sauté for about 30 seconds until fragrant. Then, add the cherry tomatoes and olives, cooking for about 3-4 minutes until the tomatoes start to soften. Finally, stir in the fresh spinach and cook until wilted, about 2 minutes.
Serve
Fluff the rice with a fork and divide it among plates. Top with the sautéed vegetables and place the salmon fillet on top. Drizzle any remaining juices from the skillet over the salmon and serve immediately.
