In a large skillet, melt the butter over medium heat. Add the diced apples, sugar, cinnamon, nutmeg, and lemon juice. Cook until the apples are tender and the mixture is bubbly, about 8-10 minutes. Remove from heat and let cool.

Roll out the pie crusts on a floured surface and cut them into 6-inch circles. Place a spoonful of the apple filling in the center of each circle. Fold the dough over the filling to create a half-moon shape and crimp the edges to seal.
