    Prepare and simmer broth

    Peel the 1-inch piece of fresh ginger and lightly smash it with the flat of a knife. In a medium saucepan, combine 4 cups broth, 1 cup water, smashed ginger, and 2 smashed garlic cloves. Bring to a gentle simmer over medium heat.

    Reduce heat to low and add 2 tablespoons soy sauce, 1 tablespoon mirin, 1 teaspoon sesame oil, and 1/2 teaspoon salt. Simmer gently, uncovered, for 10 minutes to allow flavors to meld. Keep warm on the lowest heat while you prepare the rest of the bowl.

    After simmering, skim any foam, taste and adjust seasoning (add up to 1/2 tablespoon soy sauce or a pinch more salt if needed). Remove and discard the smashed ginger and garlic if preferred for a cleaner broth.

Noodles & Toppings

    Rehydrate wakame

    Place 1/4 cup dried wakame in a small bowl and cover with warm water for 5 minutes, or until rehydrated and tender. Drain, squeeze gently to remove excess water, and set aside.

    Soft-boil the eggs (onsen-style)

    Bring a small pot of water to a gentle boil. Using a spoon, lower 2 large eggs into the water and boil for 6 minutes for a soft but set white and jammy yolk. Immediately transfer eggs to an ice bath for 5 minutes. Peel gently and keep warm or refrigerate briefly if needed.

    Cook noodles

    Bring the broth to a gentle simmer. In a separate pot, bring water to a rolling boil and cook 2 servings of ramen noodles according to package instructions (usually 2–4 minutes for fresh, 3–5 minutes for dried) until al dente. Drain and briefly rinse under hot water to remove excess starch. Divide noodles into two serving bowls.

    Quick toss bean sprouts

    Heat 1 teaspoon vegetable oil in a small skillet over medium-high heat. Add 1 1/2 cups rinsed bean sprouts and stir-fry for 30–45 seconds until just tender-crisp. Splash with 1 teaspoon rice vinegar, toss once, and remove from heat. This lightly cooks the sprouts while keeping crunch.

    Assemble bowls

    Ladle the hot broth over the noodles in each bowl, dividing evenly. Arrange 3/4 cup cooked bean sprouts, half of the rehydrated wakame (about 2 tablespoons) per bowl, and place one peeled soft-boiled egg halved on top of each bowl, yolk side up.

    Garnish and finish

    Top each bowl with sliced green onions (about 1 stalk per bowl), 1/2 teaspoon toasted sesame seeds, and 1/2 teaspoon grated fresh ginger. Add a drizzle (about 1/2 teaspoon) of chili oil and a sprinkle of furikake or nori if using. Taste and adjust with extra soy or a pinch of salt if needed.

    Serve immediately while hot. To eat, gently break the soft egg yolk into the broth and stir to combine flavors.
