Stabilize shells

Spread the crushed rock salt or coarse kosher salt in a shallow heatproof serving tray or baking sheet to create a stable bed for the oyster shells. This prevents tipping when assembling and serving.

Place oysters

Rinse the outside of the oyster shells briefly and place each shucked oyster in its half shell onto the salt bed, spacing them evenly. Keep oysters chilled if not cooking immediately.

Bomb Sauce (spicy citrus soy glaze)

Combine the soy sauce, mirin, lime juice, honey, Sriracha, sesame oil, and grated ginger in a small bowl. Whisk until honey is fully dissolved and the mixture is homogenous. Taste and adjust heat or sweetness as desired.

Warm (optional)

For a slightly more cohesive glaze and to mellow raw alcohol notes in mirin, warm the sauce gently in a small saucepan over low heat for 1–2 minutes — do not boil. Remove from heat and let cool slightly before using.

Crispy Toppings

Toast panko

Heat 1 tablespoon neutral oil in a small skillet over medium heat. Add the panko and toss constantly until evenly golden brown, 2–4 minutes. Remove from heat and let cool on a plate so it crisps up.

Mix toppings

In a small bowl combine the toasted panko, sliced green onion, chopped cilantro (if using), and toasted sesame seeds. Stir to combine.

Assembly & Finish

Dress oysters

Using a small spoon, place about 1 teaspoon of the bomb sauce on top of each oyster (adjust to taste). The sauce should lightly coat but not drown the oyster.

Add crispy topping

Sprinkle about 1/2 to 1 teaspoon of the toasted panko mixture over each sauced oyster so there is a crunchy layer on top.

Final touches

Garnish each oyster with a small sprig of microgreens or a few cilantro leaves if desired. Arrange lemon or lime wedges on the side for squeezing.

Serve

Serve immediately on the salt bed while the panko is still crispy and oysters are cold. Provide small forks or picks for easy eating.
