Method

Orange juice (single-serving)

    Prepare oranges

    Wash the oranges under cold water. Roll each orange on the countertop with gentle pressure to loosen juices. Cut each orange in half crosswise.

    Juice

    Using a manual citrus juicer or an electric juicer, extract juice from the 3 orange halves until you have about 1 to 1 1/4 cups of fresh orange juice. Strain through a fine-mesh sieve into a measuring cup if you prefer pulp-free juice; press solids with the back of a spoon to extract more liquid.

    Season and dilute

    Add the teaspoon of sugar (or simple syrup), 1 teaspoon fresh lemon juice, and a pinch (1/4 tsp) of salt to the orange juice. Stir until sugar dissolves. If the juice is very sweet or very concentrated, add up to 1/4 to 1/2 cup cold water to taste.

    Serve

    Fill a glass with 4–6 ice cubes. Pour the prepared orange juice over the ice. Top with a splash (optional) of sparkling water for fizz, garnish with an orange slice and mint if desired, and serve immediately.

Apple juice (single-serving)

    Prepare apples

    Wash the apples. Core and cut into quarters; you may peel them if you prefer clearer juice, but peel can be left on for more nutrients and flavor.

    Process

    If using a juicer: feed apple pieces through a juicer and collect about 1 to 1 1/4 cups fresh apple juice. If using a blender: place apple pieces in the blender with 1/4 to 1/2 cup cold water and blend until smooth.

    Strain (if using blender)

    Pour blended apple mixture through a fine-mesh sieve or nut milk bag into a bowl or measuring cup. Press or squeeze to extract as much liquid as possible. You should have about 1 to 1 1/4 cups of juice.

    Season and adjust

    Stir in 1 teaspoon simple syrup or sugar (adjust to taste), 1 teaspoon fresh lemon juice, and a pinch (1/4 tsp) of salt. Add up to 1/4 cup cold water if the flavor is too strong.

    Serve

    Fill a glass with 4–6 ice cubes. Pour the apple juice over ice. Optionally top with a splash of sparkling water, garnish with an apple slice and mint, and serve immediately.
