Grilled Chicken Breast seasoned with Extra Virgin Olive Oil, a dash of Lemon and a sprinkle of Parsley. Served with Broccoli.
In a bowl, mix the extra virgin olive oil, lemon juice, chopped parsley, salt, and black pepper. Add the chicken breasts to the marinade, ensuring they are well coated. Cover and let marinate in the refrigerator for at least 30 minutes.
Preheat the grill to medium-high heat. Remove the chicken from the marinade and discard any leftover marinade. Grill the chicken breasts for about 6-7 minutes on each side or until fully cooked and juices run clear. Remove from the grill and let rest for a few minutes.
In a pot, bring 1 cup of water to a boil. Add the broccoli florets and a teaspoon of salt. Cover and steam for about 5-6 minutes or until the broccoli is tender but still bright green. Drain and set aside.
Serve the grilled chicken breast alongside the steamed broccoli. Garnish with additional fresh parsley if desired.
