Shrimp Preparation

Boil the Shrimp

In a large pot, bring 4 cups of water to a boil. Add the juice of half a lemon and Old Bay seasoning. Once boiling, add the shrimp and cook for about 2-3 minutes or until they turn pink and opaque.

Cool the Shrimp

Remove the shrimp from the pot and transfer them to an ice bath (a bowl of ice water) to stop the cooking process. Let them cool for a few minutes.

Peel the Shrimp

Once cooled, peel the shrimp, leaving the tails on for presentation.

Tomatillo Cocktail Sauce Preparation

Prepare the Tomatillos

Remove the husks from the tomatillos and rinse them under cold water. Cut them into quarters.

Blend the Sauce

In a blender, combine the cut tomatillos, ketchup, lime juice, hot sauce, cilantro, salt, and pepper. Blend until smooth.

Taste and Adjust

Taste the sauce and adjust seasoning with additional salt or pepper as necessary.

Plating

Serve

Arrange the peeled shrimp on a serving platter and serve with the tomatillo cocktail sauce on the side. Garnish with lemon wedges if desired.
