Ice Cream Preparation
Blend the Base
In a large mixing bowl, beat the cream cheese with the granulated sugar until smooth and creamy. Gradually add in the heavy cream, milk, vanilla extract, lemon juice, and a pinch of salt, mixing until well combined.
Chill the Mixture
Cover the bowl with plastic wrap and refrigerate the mixture for at least 2 hours, or until it's completely chilled.
Churn the Ice Cream
Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer's instructions, typically about 20-30 minutes until it reaches a soft-serve consistency.
Freeze the Ice Cream
Transfer the churned ice cream into an airtight container and freeze for at least 4 hours, or until firm.
Mixing the Drink
Combine the Spirits
In a cocktail shaker, combine the berry vodka and vanilla vodka with ice. Shake well until chilled.
Prepare the Glass
Fill a glass halfway with ice and pour the chilled vodka mixture over the ice.
Add Strawberry Soda
Top off the glass with strawberry soda for a refreshing fizz.
Serve
Scoop the cheesecake ice cream into the glass and garnish with fresh strawberries on top. Serve immediately.
