Whole Grilled Branzino
Clean the branzino by removing the scales and guts. Rinse it under cold water and pat dry with paper towels.
In a small bowl, mix olive oil, minced garlic, salt, black pepper, and juice of half the lemon. Rub this mixture all over the fish, inside and out. Stuff the cavity with fresh parsley, thyme, and the remaining lemon cut into slices.
Preheat your grill to medium-high heat (about 400°F or 200°C).
Place the branzino on the grill and cook for about 6-8 minutes on each side, or until the flesh is opaque and flakes easily with a fork.
Remove from the grill and let rest for a few minutes before serving. Drizzle with additional olive oil, if desired, and garnish with extra herbs.
