Prepare cooked quinoa
If you don't have pre-cooked quinoa, rinse 1/4 cup dry quinoa under cold water and cook with 1/2 cup water: bring to a boil, reduce to simmer, cover and cook 12–15 minutes until water is absorbed. Allow to cool slightly before using. Yield needed: 1/2 cup cooked.

In a medium bowl, combine rolled oats, cooked quinoa, almond milk and yogurt. Stir to combine so oats begin to soften. Let sit 8–10 minutes (or refrigerate overnight for a softer, chilled parfait-style).

Mash the ripe banana in a small bowl until mostly smooth (leave a few chunks for texture). Fold the mashed banana into the oat/quinoa mixture to naturally sweeten and bind.

Gently fold in the grated carrot and diced apple to the base mixture so they distribute evenly without breaking the fruit pieces.

Reserve the fresh berries for layering and garnish. If using larger strawberries, quarter them; keep blueberries whole.

Add chopped walnuts, chia seeds, flaxseed meal and shredded coconut to the mixture. Stir thoroughly so seeds absorb moisture and distribute evenly.

Allow mixture to rest 5 minutes after adding chia so it begins to thicken. If it becomes too thick, stir in up to 1–2 tablespoons extra almond milk to reach desired creaminess.
Sweeteners & Flavor

Stir in raw honey or maple syrup, vanilla extract, ground cinnamon and a pinch of sea salt. Taste and adjust sweetness or cinnamon to preference.

Sprinkle extra chopped walnuts and shredded coconut on top. Add microgreens or mint leaves if using, and finish with a light drizzle (1 tsp) of maple syrup if extra sweetness is desired.

Serve immediately for a slightly warm/sturdy texture, or chill 30–60 minutes for a firmer, parfait-like experience. Keeps refrigerated in an airtight container up to 2 days (stir before serving).
