Method
Prepare Tomatoes & Base
- 1
Wash and halve tomatoes
Rinse the organic grape tomatoes under cold running water and drain. Pat dry with a clean towel. Using a sharp paring knife, halve each grape tomato and place them in a medium mixing bowl.
- 2
Mince aromatics
Peel and finely mince the garlic clove. Finely dice the 1/4 small red onion into small pieces. Add both the minced garlic and diced red onion to the bowl with the halved tomatoes.
Season & Finish
- 3
Dress the tomatoes
Add 2 tablespoons extra-virgin olive oil, the juice of half a lemon (about 1 tablespoon), 1/2 teaspoon sea salt, and 1/4 teaspoon freshly ground black pepper to the tomato mixture. Gently toss with a spoon until the tomatoes are evenly coated.
- 4
Add basil and rest
Stack the basil leaves, roll tightly, and chiffonade (thinly slice) until you have about 1/2 cup loosely packed ribbons. Add the basil to the bowl and fold gently into the dressed tomatoes. Let the mixture rest at room temperature for 10–15 minutes to allow flavors to meld.
- 5
Taste and adjust
After resting, taste and adjust seasoning if needed — add a pinch more salt or a squeeze more lemon juice to brighten, then gently toss before serving.
