Wash the 6 organic Gala apples under cool running water, rub gently to remove any residue. Pat dry with a clean towel.

Using an apple corer or a paring knife, remove the cores. Slice each apple into 8 equal wedges (about 1/4-inch thick). Place slices into a large mixing bowl as you work.

In a small bowl, combine 2 tablespoons fresh lemon juice with 2 tablespoons water. Pour the lemon-water over the apple slices and toss gently so all pieces are lightly coated; this prevents browning and brightens flavor.
