Rinse and inspect
Place the 4 cups of organic blueberries in a colander and gently rinse under cool running water. Remove any stems, bruised or squashed berries. Shake gently to remove excess water and transfer to a large mixing bowl.

Prepare mint
Stack the 8 mint leaves, roll them tightly, and thinly slice (chiffonade). Add the sliced mint to the bowl with blueberries. Reserve a few whole leaves for garnish if desired.

Sweeten and season
Add 2 tablespoons of honey or maple syrup to the berries (adjust to taste). If you prefer a lighter maceration and extra syrup, sprinkle 1 tablespoon granulated sugar instead of or in addition to the honey. Add a pinch of sea salt to brighten the flavors.

Macerate
Gently toss the berries with a large spoon or rubber spatula to evenly coat with lemon, sweetener, zest, mint, and salt. Let the mixture sit at room temperature for 10–15 minutes to macerate — the berries will release some juices and the flavors will meld. If serving later, cover and refrigerate for up to 12 hours; bring back to room temperature 10 minutes before serving.

Serve simply
Spoon the macerated blueberries into bowls or a serving dish. Garnish with reserved mint leaves and an additional lemon zest if desired.

Serve with yogurt or granola
To make parfaits, layer 1/2 cup Greek yogurt, 1/3 cup macerated blueberries, and 2 tablespoons granola in serving glasses. Repeat once and finish with a few whole berries and mint. For a dessert option, serve with whipped cream and a sprinkle of toasted almonds or extra granola.
