Prepare oven & pans
Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan and line the base with parchment paper for easy removal.

Whisk dry ingredients: In a medium bowl, sift or whisk together the all-purpose flour, baking powder and sea salt until evenly combined.

Combine wet ingredients: In a large mixing bowl, whisk the organic cane sugar and eggs until well combined and slightly pale, about 1–2 minutes. Whisk in the melted butter, organic whole milk, vanilla extract and lemon zest until smooth.

Fold wet and dry: Add the dry ingredients to the wet mixture in two additions, gently folding with a spatula until just combined. Do not overmix; a few small lumps are fine.

Bake: Pour the batter into the prepared pan and smooth the top. Bake on the center rack for 28–32 minutes, or until the top is golden and a toothpick inserted in the center comes out with a few moist crumbs. Remove from oven and let cool in pan for 10 minutes, then invert onto a wire rack to cool completely.

Prepare cream cheese filling: While the cake cools, place the softened cream cheese in a medium bowl and beat with a whisk or electric mixer until smooth. Add the powdered sugar and maple syrup and beat until creamy and spreadable. Fold in the Greek yogurt until fully incorporated; the mixture should be smooth but slightly airy.

Assemble layer (optional): If you prefer a horizontal filling, carefully slice the cooled cake in half horizontally with a serrated knife. Spread two-thirds of the cream cheese mixture evenly on the bottom half, then replace the top half. If not slicing, simply spread the full cream cheese mixture over the top of the whole cake.

Add fresh fruit: Arrange the sliced strawberries and blueberries over the cream cheese layer or across the top of the cake in an attractive pattern. Sprinkle toasted sliced almonds over the fruit for crunch.

Chill: Refrigerate the assembled cake for at least 30 minutes to allow the filling to set and flavors to meld.

Finish and serve: Just before serving, lightly dust the top with confectioners' sugar, garnish with fresh mint leaves and edible flower petals if using. Slice and serve chilled or at cool room temperature.
