    Weigh and Prepare Beans

    Weigh 60 grams (0.06 kg) of your house-blend medium-roast Arabica beans. Reserve 10 grams (0.01 kg) for calibration/tasting if desired. Use whole beans stored in an airtight container away from light until ready to grind.

    Grind

    Grind the 60 g of beans to a medium-coarse consistency suitable for pour-over or drip brewing (similar to sea salt). Adjust grind finer for stronger extraction or coarser for lighter extraction. Use the reserved 10 g to taste and adjust grind if needed.

    Heat Water

    Heat 350 ml of filtered water to 92–96°C (198–205°F). If you don't have a thermometer, bring to a boil and let rest 30 seconds.

Brewing

    Prepare Filter and Rinse

    Place a paper filter in your pour-over dripper or ensure the metal filter is clean. Rinse the paper filter thoroughly with hot water to remove paper taste and preheat the dripper and server. Discard rinse water.

    Bloom

    Place the ground coffee into the filter. Start a timer and pour 60 ml of the hot water evenly over the grounds to saturate them. Allow the coffee to bloom for 30–45 seconds to release trapped gases.

    Main Pour

    After the bloom, pour the remaining 290 ml of water in slow, steady concentric circles, keeping the water level consistent and avoiding pouring directly on the filter walls. Aim to finish pouring within 2 minutes.

    Drawdown and Serve

    Allow the coffee to draw down completely — total brew time (including bloom) should be 2:30–3:30 minutes. Remove the dripper, swirl the server gently, and pour the brewed coffee into a cup.

Finish & Optional Add-ins

    Adjust to Taste

    Taste the coffee black first. If desired, add up to 60 ml milk (dairy or plant-based) and up to 1 tsp sweetener, stirring to combine. If the coffee tastes sour, try a finer grind or slightly hotter water next time; if bitter, try a coarser grind or lower water temperature.

    Store any unused beans in an airtight container in a cool, dark place. Use brewed coffee within 30 minutes for best flavor.
