Method

Prepare

Chill glass

Place a coupe or Martini glass in the freezer or fill with ice water to chill while you assemble the cocktail.

Juice half a lemon to obtain 0.5 oz fresh lemon juice and measure out all ingredients so they are ready.

Mix Cocktail

Combine base ingredients

In a cocktail shaker, add 2 oz gin, 0.5 oz dry vermouth, 0.5 oz Aperol, 0.5 oz fresh lemon juice, 0.25 oz simple syrup and 2 dashes orange bitters.

Add ice and shake

Fill the shaker with ice (enough to nearly fill). Seal and shake vigorously for about 12–15 seconds until well-chilled and slightly diluted.

Strain

Discard ice/water from the chilled glass. Double-strain the mixture from the shaker into the chilled coupe or cocktail glass to remove ice shards.

Finish & Serve

Top with sparkling wine

Gently float or pour 2 oz chilled sparkling wine on top of the strained cocktail. Pour slowly down the side of the glass to preserve effervescence.

Garnish

Express the oils of a lemon twist over the drink, rim the glass with it if desired, then drop the twist into the cocktail.

Serve immediately while the sparkling wine is lively. Enjoy.
