Shiso Simple Syrup

Combine 1 cup water and 1 cup sugar in a small saucepan and bring to a gentle simmer over medium heat, stirring until sugar fully dissolves.

Remove from heat and add packed shiso leaves and lime zest (if using). Press the leaves gently with a spoon to release oils and flavor into the syrup.

Let the mixture steep, covered, for 20–30 minutes off the heat to extract maximum flavor without cooking the leaves too long (this preserves the bright shiso character).

Strain the syrup through a fine mesh sieve or cheesecloth into a clean container, pressing on the leaves to extract as much liquid as possible. Discard solids.

Let syrup cool to room temperature, then refrigerate. Syrup will keep in the refrigerator for up to 10 days.

Shiso Lover’s Margarita (single cocktail)

Prepare the glass (optional)

If salting the rim, rub a lime wedge around the rim of a rocks or coupe glass, then dip the rim into a shallow plate of coarse salt or tajín. Set the glass aside.

Muddle shiso

Add 2 fresh shiso leaves to a cocktail shaker. Lightly clap the leaves between your hands to release aromatics, then gently muddle in the shaker with a wooden muddler or the back of a spoon for about 5–8 seconds—just to bruise and release oils, not pulverize.

Build the cocktail

Add 2 oz blanco tequila, 1 oz fresh lime juice, 0.75 oz triple sec, 0.5 oz chilled shiso simple syrup and a handful of ice (about 6 cubes) to the shaker.

Shake

Secure the shaker lid and shake vigorously for 10–15 seconds until the shaker is frosty and well chilled. The shaking chills and lightly dilutes the drink to balance the flavors.

Strain

Double-strain the cocktail into the prepared glass over fresh ice (for a rocks presentation) or fine-strain into a chilled coupe if you prefer it up. Double-straining removes muddled leaf bits and creates a smoother texture.

Garnish and finish

Garnish with 1 fresh shiso leaf placed on the surface or lightly slapped between your palms and floated to release aroma. Express a lime peel over the drink if you want extra citrus oils. Serve immediately.
