Chill glass

Place a rocks glass in the freezer or fill with ice water to chill while you prepare the cocktail.

Measure and have all ingredients ready: pisco, lime juice, yuzu juice (or substitute), simple syrup, egg white (or aquafaba), Angostura bitters, candied ginger, and pepper.

Shake & Emulsify

Dry shake

In a cocktail shaker, combine pisco, fresh lime juice, yuzu juice, simple syrup, and egg white (or aquafaba). Do not add ice yet. Seal the shaker and shake vigorously for 15–25 seconds to emulsify and create a rich, foamy texture.

Wet shake

Open the shaker, add a generous amount of ice (enough to fill the shaker about two-thirds). Seal and shake hard for another 12–18 seconds until the shaker is very cold to the touch and the foam has tightened.

Strain & Finish

Dump the ice water or remove the glass from the freezer. Place a large clear ice cube in the chilled rocks glass.

Double-strain the cocktail through a Hawthorne strainer and a fine-mesh strainer into the prepared glass to remove ice shards and ensure a silky texture.

Bitters garnish

Carefully drop 3 dashes of Angostura bitters onto the foam. Using a cocktail pick or toothpick, gently swirl or drag small patterns if desired to create an attractive design.

Finish garnish

Thread a small piece of candied ginger onto a pick and rest it on the rim or place it on the ice cube. Optionally finish with a very light pinch of cracked black pepper or a couple of crushed pink peppercorns on top of the foam for a faint floral-spicy note.

Serve immediately. Encourage the drinker to sip slowly to enjoy the contrast of bright citrus, smooth egg-white foam, and the aromatic bitters with the candied ginger accent.
