Make the Pasta Dough
In a large bowl, combine flour and salt. Make a well in the center and add the eggs. Gradually mix the flour into the eggs until a dough forms. Knead the dough on a floured surface for about 10 minutes, until smooth. Wrap in plastic wrap and let it rest for 30 minutes.
Prepare the Filling
In a medium bowl, mix the ricotta cheese, grated Parmesan, salt, and black pepper until well combined. Set aside.
Roll Out the Dough
After resting, divide the dough into four pieces. Roll out one piece at a time on a floured surface to about 1/16 inch thickness. Keep the remaining dough covered to prevent drying out.
Fill the Ravioli
Place small spoonfuls of the cheese filling about 1 inch apart on one half of the rolled-out dough. Fold the other half over the filling, pressing down to seal. Cut out individual ravioli using a knife or a pasta cutter.
Cook the Ravioli
Bring a large pot of salted water to a boil. Cook the ravioli in batches for about 4-5 minutes, or until they float to the surface and are tender. Remove with a slotted spoon.
Serve
Serve the cooked ravioli warm, topped with your choice of meat sauce or marinara sauce.
