Warm Apple Filling

    Prepare apples

    Peel (optional), core and slice the apples into 1/4-inch thick wedges so that you have about 4 cups. Toss the slices in a bowl with the lemon juice to prevent browning.

    In a 10-inch ovenproof skillet or medium saucepan over medium heat, melt 3 tablespoons unsalted butter. Add the granulated sugar and light brown sugar and stir until the mixture begins to bubble and sugars dissolve, about 1–2 minutes.

    Add the apple slices to the pan, stirring to coat them evenly with the sugar-butter mixture. Cook, stirring occasionally, until the apples begin to soften, about 6–8 minutes.

    Stir in ground cinnamon, ground nutmeg, and 1/8 teaspoon salt. Continue cooking another 2 minutes so the spices bloom and coat the fruit.

    If you prefer a thicker sauce, mix 1 teaspoon cornstarch with 1 teaspoon cold water to make a slurry, then stir it into the pan and simmer for 1 minute until the sauce slightly thickens. Taste and adjust sweetness or spice as needed. Remove from heat.

Topping (crumb or streusel)

    Preheat the oven to 375°F (190°C) if you plan to finish the dessert in the oven for a crisp topping. If serving immediately soft-style, you can skip oven step and simply sprinkle the topping and broil briefly.

    In a medium bowl combine 1/2 cup flour, 1/2 cup rolled oats, 1/4 cup packed light brown sugar, 1/4 teaspoon ground cinnamon, and 1/16 teaspoon salt. Cut the 3 tablespoons cold butter into small cubes and use a pastry cutter or your fingertips to work the butter into the dry ingredients until the mixture resembles coarse crumbs and holds together when pinched.

    If using an ovenproof skillet with the cooked apples, evenly sprinkle the streusel over the warm apples. Bake in the preheated oven until the topping is golden and crisp, about 12–15 minutes. Alternatively, if you used a saucepan, transfer the apples to a small baking dish, top with streusel and bake as above.

    For a quicker finish without baking: sprinkle the streusel over the hot apples and place under a hot broiler 1–2 minutes, watching carefully to avoid burning, until topping is toasted.

To Serve

    Spoon the warm apple dessert into individual bowls or plates. Top each serving with a scoop of vanilla ice cream (about 1 scoop per serving).

    Optionally grate a little lemon zest over the ice cream for brightness. Serve immediately so the ice cream begins to melt into the warm apples.
