Preparation
Prepare the Vegetables
Wash and chop all the vegetables as indicated. Ensure they are bite-sized for even cooking.
Mix the Sauce
In a small bowl, combine soy sauce, sesame oil, minced garlic, minced ginger, cornstarch, and water. Whisk together until smooth and cornstarch is dissolved.
Cooking
Stir-fry the Vegetables
Heat a large frying pan or wok over medium-high heat. Add a splash of oil to the pan. Once the oil is hot, add bell peppers, broccoli, carrots, snow peas, and mushrooms. Stir-fry for about 5-7 minutes until the vegetables are tender-crisp.
Add the Sauce
Pour the sauce mixture over the stir-fried vegetables. Stir continuously for another 2-3 minutes until the sauce thickens and coats the vegetables evenly.
Garnish and Serve
Remove from heat, stir in chopped green onions, and serve immediately over rice or noodles if desired.
