Chicken breast scaloppine parmigiana style with spaghetti and tomato sauce
Preheat your oven to 375°F (190°C). Season the chicken breasts with salt and black pepper. Dredge each breast in flour, shaking off the excess.
Beat the eggs in a shallow bowl. Dip each floured chicken breast into the eggs, then coat with breadcrumbs, pressing gently to adhere.
In a large skillet, heat olive oil over medium heat. Fry the breaded chicken breasts for about 3-4 minutes on each side until golden brown. Transfer to a baking dish.
Pour marinara sauce over the chicken, then sprinkle mozzarella and Parmesan cheese on top. Bake in the preheated oven for 20-25 minutes until cheese is bubbly and golden.
While the chicken is baking, cook the spaghetti according to package instructions. Drain and set aside.
Serve the baked chicken over a bed of spaghetti, garnished with fresh basil, and enjoy!
