Mix and shape patties
Place the ground beef in a large bowl. Add kosher salt, black pepper, Worcestershire sauce, and onion powder. Gently mix with your hands until just combined — do not overwork. Divide into two equal portions and shape each into a loose ball, then press gently into patties about 3/4 inch thick and slightly larger than the buns (they will shrink). Make a shallow 1/2-inch indentation in the center of each patty with your thumb to reduce doming during cooking.

Cook patties
Heat a heavy skillet or cast-iron pan over medium-high heat until very hot, about 3-4 minutes. Add the vegetable oil and swirl to coat. Place the patties in the pan, indentation-side up, and cook undisturbed for 3-4 minutes until a deep brown crust forms. Flip once and cook 2-3 minutes more for medium doneness. In the last 60 seconds of cooking, lay a slice of cheddar on each patty and cover the pan with a lid to melt the cheese. Remove patties to a plate and tent loosely with foil to rest for 3 minutes.

Prepare toppings
While patties rest, slice the tomato into 1/4-inch rounds, thinly slice the red onion, wash and dry the lettuce leaves, and have pickle slices ready. Cook bacon strips until crisp in a skillet or oven, then transfer to paper towels to drain.

Assemble condiments
In a small bowl combine mayonnaise and mustard (optional: add a pinch of salt and pepper). Spread ketchup on one bun half if desired.

Assemble Louis' Burger
Place the bottom bun on a plate. Spread a thin layer of the mayo-mustard mixture (or ketchup) on the bottom bun. Add the lettuce leaf, then the cheese-topped beef patty, 2 bacon strips (per burger), tomato slices, onion slices, and 3 pickle slices. Spread ketchup on the top bun (or leave plain) and place on top to finish. Press gently to compact.

Serve
Cut the burger in half if desired and serve immediately with fries or a side salad.
