Prepare wings
Pat the chicken wings very dry with paper towels. Removing surface moisture helps them crisp.

In a large bowl, combine baking powder, kosher salt, black pepper, garlic powder, and smoked paprika. Toss the wings with the dry mixture until evenly coated. Drizzle 1 tablespoon neutral oil over the wings and toss again so the coating adheres and the wings have a light sheen.

Arrange a wire rack on a rimmed baking sheet. Spread wings in a single layer, skin side up, leaving space between pieces for air circulation.

Refrigerate uncovered for 30 minutes (optional) to further dry the skin, or proceed directly to roasting.

Preheat oven to 425°F (220°C). Roast the wings for 25 minutes, then flip each wing and continue roasting for another 12–18 minutes until the skin is golden brown and crisp and an internal temperature of 165°F (74°C) is reached.
For the hot honey glaze

While the wings roast (or during the last 10 minutes), make the glaze. In a small saucepan set over low heat combine the honey, hot sauce, apple cider vinegar, unsalted butter, red pepper flakes, soy sauce, grated garlic, and salt.

Warm gently, stirring frequently, until the butter is melted and the mixture is smooth and slightly thickened, about 5 minutes. Do not boil vigorously—just a gentle simmer to meld flavors. Taste and adjust heat (add more hot sauce or red pepper flakes) and acidity (more vinegar or 1/2 tbsp lemon juice) as desired. Stir in the lemon juice at the end to brighten the glaze.

Keep the glaze warm on the lowest heat setting and whisk occasionally so it stays pourable for tossing the wings.

When wings are fully cooked and crispy, transfer them to a large, clean mixing bowl. Using a ladle or spoon, pour about two-thirds of the hot honey glaze over the wings.

Toss the wings gently but thoroughly so each piece is evenly coated. Taste one wing and add more glaze if you want it saucier (reserve some glaze for drizzling).

Transfer glazed wings to a serving platter. Sprinkle chopped cilantro or parsley and toasted sesame seeds over the top. Serve immediately with lime wedges on the side for squeezing.
