Prep the potatoes: wash and peel if desired. Cut potatoes into 1/4–1/2-inch sticks for classic fries. Pat dry thoroughly with paper towels — removing moisture helps crispness.

Optional soak: place cut potatoes in a bowl of cold water for 20–30 minutes to remove excess starch, then drain and pat completely dry.

Heat oil: pour oil into a deep pot or heavy-bottomed skillet to a depth of about 1–2 inches. Heat to 325°F (160°C) for the first blanch fry. If you don’t have a thermometer, heat until oil shimmers and a small piece of potato sizzles gently.

First fry (blanch): working in batches, lower the dried potato sticks into the oil and fry for 3–4 minutes until pale and slightly tender but not brown. Remove with a slotted spoon to a wire rack or paper towels. Let rest 5 minutes.

Increase oil temperature to 375°F (190°C) for crisping. Fry the blanched potatoes again in batches for 2–3 minutes until golden brown and crispy.

Drain and season: transfer fries to a paper towel–lined tray or wire rack. Immediately sprinkle with 1 tsp salt, 1/2 tsp black pepper, and 1/2 tsp paprika (if using). Keep warm in a low oven (200°F / 95°C) while you make the cheese sauce.

Make a roux

In a medium saucepan over medium heat, melt 2 tablespoons butter. When foaming subsides, whisk in 2 tablespoons flour and cook for 1–2 minutes while whisking to remove raw flour taste; do not let it brown.

Add milk gradually: slowly whisk in 1 cup whole milk, a little at a time, to avoid lumps. Continue whisking until smooth.

Simmer and thicken: bring sauce to a gentle simmer, whisking frequently, until it thickens enough to coat the back of a spoon, about 3–5 minutes.

Season and melt cheese: reduce heat to low. Whisk in 1/2 teaspoon ground mustard (or Dijon), 1/4 teaspoon Worcestershire, 1/4 teaspoon salt, 1/4 teaspoon black pepper, and 2 teaspoons hot sauce if using. Gradually stir in 1 cup grated sharp cheddar and 1/2 cup monterey jack, a handful at a time, stirring until fully melted and smooth. Do not let the sauce boil once cheese has been added or it may separate.

Adjust consistency: if sauce is too thick, whisk in 1–2 tablespoons milk until desired consistency for drizzling is reached. Keep sauce warm on the lowest heat, stirring occasionally.

Assembly & Toppings

Plate the fries: arrange hot fries on a large platter or individual plates.

Pour cheese sauce: spoon or drizzle the warm cheese sauce evenly over the fries, or serve sauce on the side for dipping.

Add optional toppings: scatter crumbled bacon, sliced green onions, pickled jalapeños, and dollops of sour cream over the sauced fries as desired.

Serve immediately: serve the cheese fries hot so the sauce is gooey and fries remain crisp. Provide napkins and extra salt or hot sauce on the side.
