Form the patty

Divide 6 oz (0.375 lb) ground beef into one portion and gently shape into a round patty about 3.5–4 inches in diameter and roughly 3/4 inch thick. Do not overwork the meat—handle just enough to form a cohesive patty. Make a shallow dimple (about 1/4 inch) in the center with your thumb to reduce doming during cooking.

Season

Pat both sides dry with a paper towel if wet. Sprinkle 1/2 tsp fine sea salt evenly over one side and 1/4 tsp freshly ground black pepper over both sides (or adjust to taste). Let sit at room temperature for 10 minutes while you prep the bun and toppings; this helps the patty cook more evenly.

Cook

Heat a heavy skillet or cast-iron pan over medium-high heat until shimmering (about 2–3 minutes). Add 1 tsp neutral oil and spread to coat. Carefully place the patty dimple-side up in the hot pan. Cook undisturbed for 3 minutes to develop a brown crust. Flip once and immediately place the cheese slice on the patty. Cook another 2–3 minutes for medium doneness (internal temperature ~145–155°F / 63–68°C). Adjust time +/- 1 minute for desired doneness. Remove the patty to a plate and tent loosely with foil to rest for 2–3 minutes.

Toast the bun

While the patty rests, spread 1/2 tbs softened butter evenly on the cut sides of the hamburger bun. In a separate skillet over medium heat (or in the same pan if space allows), place the buns cut-side down and toast 1–2 minutes until golden and slightly crisp. Remove and set aside.

Assemble condiments

On the bottom half of the toasted bun, spread 1 tsp mayonnaise, then 1 tsp ketchup and 1/2 tsp yellow mustard (or spread condiments to taste). Place the lettuce leaf on top of the condiments to create a moisture barrier. Add the cooked burger patty with melted cheese on top of the lettuce. Layer tomato slices, red onion rings, and dill pickle slices on the cheese. Top with the bun crown.

Optional add-ons

If using bacon, place cooked bacon strip(s) on the patty before adding tomato. If using peppers, add them on top of the cheese or under the bun top as desired.

Serve

Cut in half if desired and serve immediately while hot. Provide a napkin—this burger is juicy and best enjoyed fresh.
