Prepare oysters & serving bed

Rinse and inspect

Rinse the oysters under cold running water and scrub shells with a stiff brush to remove dirt. Discard any oysters with cracked or open shells that do not close when tapped.

Prepare serving bed

Fill a large platter or metal baking sheet with an even layer of crushed ice or rock salt to stabilize the oysters and keep them cold while serving.

Position and protect

Place an oyster flat-side up in your hand or on the towel with the hinge (pointed end) facing you. Use a thick glove or folded towel to protect your hand holding the oyster.

Insert oyster knife

Insert the tip of the oyster knife into the hinge. Apply steady pressure and twist the knife gently until you feel the hinge pop. Work the knife blade along the top shell seam to break the muscle and pry the top shell off.

Cut the muscle and clean

Run the knife under the oyster meat to detach it cleanly from the bottom shell, taking care to keep as much natural liquor (brine) as possible in the shell. Discard the top shell and place the bottom shell with the oyster on the prepared ice bed.

Repeat

Shuck all oysters, arranging them on the ice bed in a single layer so they stay level and retain their liquor.

Make classic mignonette

Combine 3 tablespoons red wine vinegar, 2 tablespoons finely minced shallot, 1 teaspoon coarsely ground black pepper, 1 teaspoon sugar (optional) and a pinch of sea salt in a small bowl. Stir and let sit at room temperature for at least 10 minutes to allow flavors to meld. Taste and adjust acidity or salt if needed.

Optional condiments & grilled variation

Cold condiments

Arrange small bowls of prepared horseradish, hot sauce, and cocktail sauce next to the oysters so guests can add to taste.

Grilled (half-shell) option

If you prefer warm oysters, preheat a grill to medium-high. Add a small spoonful of melted butter mixed with 1 teaspoon minced garlic and a pinch of salt to each shucked oyster, then place oysters on the grill on a stable tray or directly on the grill rack (bottom shell down) until edges curl and butter bubbles, about 3–5 minutes. Remove and garnish with chopped parsley.

Serve

Serve the oysters immediately on the ice bed with lemon wedges and the mignonette plus optional condiments. Instruct diners to squeeze lemon or add a small spoon of mignonette/condiment, then tilt the shell and slurp the oyster and its liquor directly from the shell.

Safety note: consume oysters the day they are purchased for best quality. Discard any oyster that smells off or has an unusual appearance. Keep oysters cold until just before serving.
