    Clean mussels

    Place mussels in a colander under cold running water. Scrub shells with a brush to remove debris and pull out any beard (byssal threads). Discard any mussels with cracked shells or that remain open when tapped.

    Rinse the cleaned mussels briefly and transfer to a bowl. Sprinkle with 1 tsp salt and set aside in the refrigerator while you prepare the broth (no more than 30 minutes).

Aromatics & flavorings

    In a large heavy-bottomed pot or deep skillet with a tight-fitting lid, heat 1 tbsp olive oil and 2 tbsp butter over medium heat until butter foams.

    Add the chopped shallots and cook, stirring, until softened and translucent, about 2–3 minutes.

    Add the minced garlic and minced ginger and cook for 30–45 seconds until fragrant, taking care not to brown them.

    Stir in the thyme sprigs, bay leaf, and red pepper flakes and cook for 20 seconds to bloom the aromatics.

Liquids

    Pour in 1 cup dry white wine and 1 cup water or seafood stock, scraping any browned bits from the bottom of the pot with a wooden spoon. Increase heat to medium-high and bring the liquid to a gentle boil.

    Reduce the heat to maintain a brisk simmer and let the liquid reduce slightly, about 3 minutes, concentrating flavors.

    If using, stir in 1/4 cup heavy cream now and return the broth to a simmer for 30–60 seconds to warm through and thicken slightly.

Cook mussels

    Add the mussels to the pot in an even layer, cover immediately with the lid, and steam over medium-high heat for 4–6 minutes, gently shaking the pot once or twice during cooking to redistribute the mussels.

    Check for doneness after 4 minutes: most mussels should be open. Continue cooking up to 6 minutes for any that remain closed. Discard any mussels that do not open.

Finishing & garnish

    Remove the pot from heat. Discard the thyme sprigs and bay leaf. Stir in 1 tbsp fresh lemon juice, 2 tbsp chopped parsley, and 1 tsp freshly ground black pepper. Taste the broth and adjust seasoning with salt if needed.

    Ladle mussels and broth into bowls or serve straight from the pot. Serve with crusty bread for sopping up the broth.
