Prepare the Filling

    Mix filling

    In a medium bowl combine shredded cooked chicken, softened cream cheese, shredded mozzarella, grated parmesan, sliced green onions, minced garlic, dried oregano, salt, pepper and hot sauce (if using). Mix thoroughly until well combined and relatively smooth. Taste and adjust seasoning.

Make the Dough

    Activate yeast

    In a small bowl whisk warm water (about 95–105°F / 35–40°C) with the sugar and instant yeast. Let rest 5 minutes until foamy. If it doesn't foam, the yeast may be inactive; start again with fresh yeast.

    Combine dry ingredients

    In a large bowl whisk together all-purpose flour and 3/4 teaspoon salt.

    Form dough

    Make a well in the center of the flour mixture. Add the foamy yeast mixture, warm milk, melted butter, and one beaten egg. Stir until a shaggy dough forms. Turn onto a lightly floured surface and knead 6–8 minutes until smooth and elastic. Alternatively, use a stand mixer with a dough hook on medium speed for 5–7 minutes.

    First rise

    Place dough in a lightly oiled bowl, cover with plastic wrap or a damp towel, and let rise in a warm draft-free place until doubled, about 60–75 minutes.

Assemble Rolls

    Roll out dough

    Punch down the risen dough and turn out onto a lightly floured surface. Roll into a rectangle about 12 x 9 inches (30 x 23 cm) and roughly 1/4 inch (6 mm) thick.

    Spread filling

    Evenly spread the chicken filling over the dough, leaving a 1/2-inch border along the far long edge to seal.

    Shape rolls

    Starting from the long edge closest to you, tightly roll the dough into a log. Pinch seam to seal. Using a sharp knife or dental floss, cut the log into 8 equal rolls (about 1.5 inches / 4 cm each).

    Second rise

    Arrange the rolls in a greased 9-inch round or 9x9-inch square baking pan, leaving a little space between each. Cover loosely and let rise for 30–40 minutes until puffy.

Bake & Finish

    Preheat oven

    Preheat oven to 375°F (190°C) about 20 minutes before baking so it's fully hot when rolls are ready.

    Egg wash

    Beat the reserved egg for the egg wash and gently brush the tops of the risen rolls. Sprinkle sesame seeds if using.

    Bake

    Bake in the preheated oven for 18–22 minutes until golden brown on top and the internal temperature reaches at least 165°F (74°C). If the tops brown too quickly, tent loosely with foil for the last 5–7 minutes.

    Cool & serve

    Remove pan to a rack and let cool 10 minutes. Garnish with chopped parsley if desired. Serve warm with marinara or ranch for dipping.
