    Prep chicken

    If using raw chicken: poach or pan-roast 1 large boneless skinless chicken breast (about 8–10 oz) until internal temp reaches 165°F (74°C), then let rest and shred. If using rotisserie or pre-cooked chicken, proceed to shredding/dicing so you have 2 cups cooked chicken.

    Sauté aromatics & peppers

    Heat a medium skillet over medium heat and add 1 teaspoon neutral oil (or a little of the butter). Add the chopped onion and red bell pepper and sauté 4–5 minutes, stirring occasionally, until softened and the onion is translucent. Add the minced garlic and cook 30–45 seconds until fragrant.

    Season and combine

    Add the shredded chicken to the skillet with the vegetables. Sprinkle in the ground cumin, chili powder, salt, and black pepper. Stir to combine and cook 1–2 minutes so the spices bloom. Remove from heat and stir in the lime juice and chopped cilantro (if using). Taste and adjust seasoning as needed.

    Mix with cheese

    In a bowl, combine the shredded cheddar and Monterey Jack cheeses. Add the warm seasoned chicken-vegetable mixture to the cheese and toss briefly so the cheese begins to soften and stick to the chicken (this makes assembly easier).

Tortillas & Assembly

    Warm the tortillas: heat a dry skillet or griddle over medium heat and warm each tortilla 10–15 seconds per side until pliable (or wrap in foil and heat in a 300°F/150°C oven for 10 minutes).

    Assemble quesadillas: Lay one warm tortilla on a work surface. Spread about 3/4 cup of the chicken-and-cheese filling evenly over half of the tortilla, leaving a 1/2-inch edge. Fold the empty half of the tortilla over the filling to form a half-moon. Repeat with remaining tortillas and filling (should make approximately 4 quesadillas).

    Cook quesadillas: Heat a large skillet or nonstick pan over medium-low to medium heat and add about 1/2 tablespoon of butter or oil. Place one folded quesadilla seam-side down in the pan. Cook 2–3 minutes until the bottom is golden brown and the cheese begins to melt. Press gently with a spatula, then flip and cook another 1.5–2 minutes until the second side is golden brown and the cheese is fully melted. Adjust heat as needed to prevent burning. Repeat, adding more butter or oil between batches.

    Rest and slice: Transfer cooked quesadillas to a cutting board and let rest 1 minute (keeps cheese from oozing out when cut). Use a sharp knife or pizza cutter to slice each into 3 wedges. Serve immediately with sour cream, salsa, and guacamole.
