In a large mash tun, heat 3 gallons of filtered water to 165°F (74°C). Add the Pilsner, Munich, Caramel/Crystal, and Carapils malts to the water.

Stir the grains well to ensure no dry clumps remain. Maintain the mash temperature at 152°F (67°C) for 60 minutes.

After mashing, sparge the grains with 3 gallons of hot water (170°F or 77°C) until you collect about 6 gallons of wort in your brew kettle.

Bring the wort to a rolling boil. Once boiling, add the Hallertau Mittlefruh hops and boil for 60 minutes.

During the last 15 minutes of the boil, add the Crystal hops to impart a subtle citrus flavor.

After the boil, cool the wort quickly using a wort chiller or an ice bath until it reaches around 65°F (18°C).

Transfer the cooled wort to a sanitized fermenter and pitch the German lager yeast.

Pitch the Yeast

Seal the fermenter with an airlock and allow the beer to ferment at a temperature of around 50°F (10°C) for about 2 weeks.

Fermentation

After fermentation is complete, prepare your bottles and priming sugar. Dissolve the priming sugar in a small amount of water and bring to a boil.

Prepare for Bottling

Siphon the beer from the fermenter into the bottles, leaving about an inch of headspace. Cap the bottles securely.

Bottle the Beer

Store the bottles at room temperature for about 1-2 weeks to allow carbonation to develop.
