In a large mash tun, heat 5 gallons of water to 170°F (77°C). Add the Pale malt, Chocolate malt, Crystal malt, and Black malt to the heated water, stirring continuously to avoid clumping.

Prepare the Mash

Maintain the temperature at 150°F (65°C) for 60 minutes to allow the enzymes to convert the starches into fermentable sugars. Stir occasionally.

Mashing Process

After 60 minutes, sparge the mash with hot water (around 170°F) to collect the wort in the brew kettle.

Sparging

Bring the collected wort to a boil. Once boiling, add the East Kent Goldings hops and boil for 60 minutes.

Boil the Wort

At the last 10 minutes of the boil, add the cocoa nibs, dried cherries, and raisins to the wort.

After 60 minutes of boiling, cool the wort rapidly using a wort chiller or an ice bath until it reaches 70°F (21°C).

Cool the Wort

Transfer the cooled wort into a sanitized fermenter. Split the vanilla beans lengthwise and add them to the fermenter as well.

Transfer to Fermenter

Sprinkle the ale yeast over the surface of the wort in the fermenter. Seal with an airlock.

Pitch the Yeast

Allow the beer to ferment at a stable temperature (around 68°F/20°C) for 2-3 weeks or until fermentation is complete.

Fermentation Period

Once fermentation is complete, sanitize bottles and caps. Prepare a priming sugar solution if bottling.

Prepare for Bottling

Carefully siphon the beer into the bottles, leaving about an inch of headspace. Cap the bottles securely.

Bottle the Beer

Allow the bottled beer to carbonate at room temperature for about 1-2 weeks. Refrigerate before serving.
