An outlaw of an Imperial Stout, tamed in Bourbon Barrels from our friends at WanderFolk Spirits. Rested long and slow on Tahitian Vanilla Beans and rich Cocoa Nibs.

In a large brew kettle, heat 1 gallon of water to approximately 160°F (71°C). Add the Imperial Stout malt and maintain the temperature for 60 minutes to extract the sugars.

Prepare the Brew

After mashing, raise the temperature to a boil and maintain for 60 minutes. Stir occasionally to prevent sticking.

Boil the Mixture

Once the boiling process is complete, cool the mixture rapidly using a wort chiller or an ice bath until it reaches about 70°F (21°C).

Cool the Brew

Carefully transfer the cooled stout into the bourbon barrel, ensuring no oxygen is introduced.

Transfer to Bourbon Barrel

Slice the Tahitian vanilla beans open and scrape the insides into the barrel along with the cocoa nibs. Seal the barrel tightly.

Add Flavorings

Allow the stout to rest in the bourbon barrel for a minimum of 3 to 6 months, depending on desired flavor intensity.

Rest the Brew

After resting, prepare your bottles and caps. Clean and sanitize them thoroughly.

Prepare for Bottling

Dissolve the priming sugar in 2 cups of boiling water and allow it to cool.

Mix Priming Solution

Add the priming solution to the stout in the barrel and carefully bottle the stout, leaving about an inch of headspace in each bottle.

Bottle the Stout

Cap the bottles securely and store them at room temperature for 2 weeks to allow carbonation to develop.

After 2 weeks, chill the bottles in the refrigerator and enjoy your Nighty Night Rider Imperial Stout!
