We've heard your cries for a winter beer that's a wee bit darker, and a wee bit heavier. KILT OPTIONAL Scotch Ale has aromas of toast and orange marmalade and flavors of honey, sweet molasses, orange peel, and fresh toasted bread.

In a large mash tun, combine the Pale Malt, Crystal Malt, and Chocolate Malt with 3 gallons of filtered water. Heat the mixture to 152°F (67°C) and hold for 60 minutes.

Mashing the Grains

After mashing, sparge the grains with an additional 2 gallons of water at 170°F (77°C) to extract the sugars.

Sparging

Transfer the wort to a boil kettle and bring to a boil. Once boiling, add the East Kent Goldings hops and boil for 60 minutes.

Boiling the Wort

With 15 minutes left in the boil, add the Fuggles hops, dried orange peel, honey, and molasses.

Adding Flavor Hops

Once the boil is complete, cool the wort quickly to around 70°F (21°C) using a wort chiller.

Cooling the Wort

Transfer the cooled wort to a sanitized fermenter and pitch the Scottish Ale yeast. Seal with an airlock.

Pitching Yeast

Allow the beer to ferment at around 68-72°F (20-22°C) for 2 weeks.

Fermentation

After fermentation, prime the beer with a sugar solution if desired, and then transfer to sanitized bottles. Cap the bottles.

Bottling the Beer

Allow the bottles to condition at room temperature for another 2 weeks before refrigerating.
