In a large mash tun, heat 3 gallons of filtered water to 165°F (74°C). Add the Pale Malt, Caramel Malt, and Flaked Wheat. Stir to combine and maintain the temperature at 152°F (67°C) for 60 minutes.

Mashing the Grains

After mashing, drain the wort into a kettle and sparge with an additional 3 gallons of heated water at 170°F (77°C) to extract remaining sugars.

Lautering

Bring the wort to a boil and add 1 oz of Mosaic Hops and 1 oz of Citra Hops. Boil for 60 minutes, adding 1 oz of Superdelic Hops in the last 15 minutes.

Boiling

After boiling, cool the wort quickly using a wort chiller or an ice bath until it reaches around 70°F (21°C).

Cooling the Wort

Transfer the cooled wort into a sanitized fermenter. Add the American Ale Yeast and seal with an airlock.

Pitching the Yeast

After fermentation has slowed (about 5-7 days), add 1 oz each of Mosaic and Citra Hops directly into the fermenter for dry hopping. Allow to sit for an additional 5-7 days.

Dry Hopping

Dissolve 3 oz of priming sugar in a small amount of water, then add it to the beer. Bottle the beer using sanitized bottles and caps, and allow to carbonate at room temperature for 1-2 weeks.
