A blend of tropical and citrus hop aromas layered upon a hefty malt backbone with a bittersweet finish.

In a large mash tun, combine 8 cups of Pale Malt, 1 cup of Crystal Malt, and 1 cup of Munich Malt with 5 gallons of filtered water.

Prepare the Mash

Heat the mash to 152°F (67°C) and maintain this temperature for 60 minutes.

Mash Temperature

After mashing, sparge the grains with an additional 5 gallons of hot water.

Sparging

Bring the collected wort to a boil in a large brew kettle.

Boil the Wort

Once boiling, add 1 oz of Citra Hops, 1 oz of Simcoe Hops, and 1 oz of Mosaic Hops. Boil for 60 minutes.

Hop Additions

In the last 5 minutes of the boil, add 1 oz of Cascade Hops.

Finish with Cascade Hops

After the boil, cool the wort quickly using a wort chiller or an ice bath until it reaches around 70°F (21°C).

Cool the Wort

Transfer the cooled wort into a sanitized fermenter and pitch 1 packet of American Ale Yeast.

Pitch Yeast

Seal the fermenter and let it ferment at room temperature for about 1-2 weeks, or until fermentation is complete.

Fermentation

Once fermentation is complete, prepare your bottles and equipment by sanitizing them thoroughly.

Prepare for Bottling

Dissolve 3 oz of priming sugar in a cup of boiling water and add this solution to the bottling bucket.

Add Priming Sugar

Siphon the beer into the bottles, leaving about an inch of headspace, and cap the bottles.

Bottling

Store the bottles at room temperature for another 1-2 weeks to carbonate.

Conditioning Period

Once carbonated, chill the beer in the refrigerator and enjoy your Ice Day Arkansas Winter IPA!
