Originally brewed for our 6th Anniversary. This Pale Lager was inspired by another Czech lager we love and admire, Budvar.

Ham and Cheese Sandwich

Sliced turkey, lettuce, tomato, and mustard in a whole wheat wrap.

Fit Turkey Wrap

Clean, crisp lager with a light, well-balanced body. Brewed in collaboration with Dylan Earl.

In a large mash tun, combine the pale malt and carapils malt with 20 liters of filtered water. Heat the mixture to 65°C (149°F) and maintain this temperature for 60 minutes.

Mashing In

After the mashing period, raise the temperature to 75°C (167°F) for 10 minutes to stop enzymatic activity.

Mashing Out

Sparge the grains and collect the wort in the brew kettle. Bring the wort to a boil and add Hallertau hops. Boil for 30 minutes.

Boil

After 30 minutes, add the Saaz hops and boil for an additional 15 minutes.

Finishing Hops

After the boil, cool the wort quickly to 12°C (54°F) using a wort chiller.

Cool the Wort

Transfer the cooled wort to the fermentation vessel and pitch the lager yeast. Seal the fermentation vessel with an airlock.

Pitch the Yeast

Allow the beer to ferment at 12°C (54°F) for 2 weeks. After fermentation is complete, condition the lager at 0°C (32°F) for another week.

Condition

If bottling, add priming sugar before bottling to carbonate. If kegging, carbonate with CO2 to desired level.
