Aromas of toasted malts, zested citrus fruit, and baked bread. Winner of the silver medal at the GABF Festival.

In a large pot, heat 3 gallons of filtered water to 162°F (72°C). Add the Pale Malt and Crystal Malt, stirring well to combine. Maintain the temperature at 150°F (65°C) for 60 minutes, stirring occasionally.

Mash the Grains

After mashing, sparge the grains with an additional 2 gallons of hot water (170°F or 77°C) to collect the wort.

Bring the collected wort to a boil. Once boiling, add the Saaz Hops and boil for 60 minutes.

With 15 minutes left in the boil, add the Cascade Hops, lemon zest, and orange zest.

After the boil, cool the wort quickly using a wort chiller or an ice bath until it reaches around 70°F (21°C).

Transfer the cooled wort to a sanitized fermentation vessel. Sprinkle the Lager Yeast over the surface and seal the vessel with an airlock.

Pitch the Yeast

Allow the lager to ferment at around 50°F (10°C) for 2 weeks.

Ferment

After fermentation, lower the temperature to 32°F (0°C) and condition for an additional 2 weeks.

Cold Condition

After conditioning, bottle the lager using a bottling wand, ensuring to add priming sugar if carbonation is desired.

Bottle the Lager

Cap the bottles securely and store them in a cool, dark place for at least another 2 weeks to carbonate.
