In a large mash tun, combine the pale malt, wheat malt, and flaked oats. Add 5 liters of heated water at 66°C (151°F) and stir well to ensure all grains are wet. Allow the mash to rest for 60 minutes.

After the mash rest, sparge the grains with additional heated water (around 75°C or 167°F) to extract all the sugars. Collect the wort in your brew kettle.

Bring the wort to a boil over high heat. Once boiling, add the Hallertau hops and boil for 60 minutes.

With 10 minutes remaining in the boil, add the orange zest for aroma and flavor.

Add the Saaz hops 5 minutes before the end of the boil to impart a mild bitterness.

Once the boil is complete, cool the wort quickly using a wort chiller or an ice bath to around 20°C (68°F).

Transfer the cooled wort to a sanitized fermentation vessel and pitch the Belgian ale yeast. Seal the container and attach an airlock.

Allow the beer to ferment at a controlled temperature of around 20°C (68°F) for about 2 weeks or until fermentation is complete.

After fermentation is complete, dissolve the priming sugar in a small amount of boiled water and let it cool. Add this to the beer before bottling.

Bottle the beer into sanitized bottles, leaving some headspace at the top, and cap them.
