Inspired by the popular New Orleans dessert Bananas Foster, this pastry hefeweizen contains notes of banana, rum, vanilla, and toasted walnut. Rich, full-bodied, with a lingering subtle sweetness. *CONTAINS LACTOSE AND WALNUTS*

In a large pot, heat 3 gallons of water to 160°F (71°C). Add the pale malt, wheat malt, and caramel malt, stirring to combine. Maintain the temperature at 152°F (67°C) for 60 minutes.

Prepare the Mash

After the mash, sparge the grains with an additional 3 gallons of water at 170°F (77°C) to collect wort in the brew kettle.

Sparging

Bring the wort to a boil. Once boiling, add the Hallertau hops and boil for 60 minutes.

Five minutes before the end of the boil, add the ripe bananas (mashed), lactose, and dark rum to the wort. Stir well to combine.

After the boil, cool the wort quickly using an immersion chiller until it reaches 70°F (21°C).

Transfer the cooled wort to a sanitized fermenter and sprinkle the hefeweizen yeast on top. Seal with an airlock.

Pitch Yeast

Allow the beer to ferment at 68-72°F (20-22°C) for 1-2 weeks until fermentation is complete.

Ferment

Before bottling, add the chopped toasted walnuts to the beer. Carefully transfer the beer into sanitized bottles, leaving some headspace.

Cap the bottles and let them condition at room temperature for 1-2 weeks before refrigerating.
